Ruairí Boyce leads a team that has debunked the notion that stadium cuisine is fast and furious comfort food. He and his vastly experienced kitchen team oversee an extensive hospitality offering for up to 80,000 guests at stadium match and entertainment events. This award-winning team, under the front of house management of Richard Li, offers a warm welcome and exceptional service to the wide range of Croke Park Meetings & Events clients who now expect innovative, exciting food experiences at their events.
Wholesome, nutritious and delicious - our range of menus takes you from breakfast meetings right through to gala dinners and one-off event experiences. Healthy Options designed by chef Cian Irwin will help feed both body and mind while unique catering options include our Stadium Street Food. Sustainable sourcing of seasonal ingredients is part of our process from menu planning to procurement and though our menus are designed to complement every occasion, we can work with you to customise your very own ready-made menu.
Just as the range of events we cater for is varied and diverse, so too are the dietary particulars of guests. Food allergies, intolerances, plant-based diets and all specific requirements are considered in the planning your events. In addition to guest preferences, the wellbeing of attendees is central to our plans with creative service styles and socially distanced dining spaces considered to guarantee your comfort while delivering safe catering experience.
In 2018 we purchased a farm in North County Dublin to grow turf for pitch maintenance and replacement. Since then, we have been growing herbs and fresh vegetables and partnered with beekeepers from Fingal Super Foods on farm beehives. These support bee and pollinator activity and produce our very own Croke Park honey. We prioritise seasonal produce and regional sourcing featuring over 85% local and regional produce on our menus. This year we will be showcasing a 100km menu of produce sourced from within 100km of the stadium.
Delicious produce from local sources
Our butcher is former Leinster Minor Champion Nigel Gahan. Gahan Meats supply our 100% Irish Beef and Pork from various farmers in the Leinster region and some of our Lamb is reared close to Croke Park’s turf farm in North County Dublin!
We source seasonal fruit and vegetables as locally as possible from a range of farmers and growers in North County Dublin and Leinster. These growers are sourced collectively through Colm Bury and Matthew Carrick of Keeling’s Markets.
Our fish comes from around the Irish coast from Kilmore Quay to Dingle Harbour and is also landed at the West Pier in Howth by Tadhgh Geary and Shane Giles of Kish Fish. Lobster comes from Balscadden Bay near Howth, Crab from Lambay Island off the Dublin coast, and Mussels from the ropes on Kilary Fjord in Connemara.
